Noma Projects is known for its innovative Smoked Mushroom Garum—a fully plant-based “umami-packed liquid seasoning.” The recipe offers an interesting twist to any dish with the earthy and fruity flavors that accompany the umami sensation. Noma Projects’ Smoked Mushroom Garum is made with organic mushrooms, salt, and rice koji. The mixture is brewed for six to eight weeks before it is submitted to processes of cold smoking and then bottled. The Smoked Mushroom Garum is handmade by the noma fermentation lab team in Copenhagen.

The brand offers its star product in a playful gift set called the Noma 2.0: Vegetable, Forest, Ocean Gift Set.
